  • 1 ½ pound ground beef

  • 10 slices of bacon, diced
  • 1 white onion, diced

  • 54 oz can pork and beans

  • 2 tsp dry mustard

Directions

Start by cooking your bacon about half way through. Set to the side on a paper towel lined plate. Once cooled enough to touch, chop into small pieces. Preheat your oven to 325F. In a deep skillet, heat 2 tbsp of bacon grease on medium high heat. Add in your onion and green pepper and saute about 5 minutes until softened. Add the remaining ingredients and let simmer for an additional minute. While it is simmering, grease a baking dish. Pour your beans into the baking dish and lay the bacon on top of the beans. Bake for 2 to 3 hours. Remove from heat and let cook for 5 minutes. Serve and enjoy.

  • ⅓ cup peanuts

  • ½ green bell pepper
  • 2 cans of white beans
  • 1 serving of kong pao sauce

Directions

Begin by heating your oil in a large skillet over medium heat. Add the peanuts and stir fry them for one minute until golden brown. Add in your jalapeno peppers slices, garlic, ginger and onion. Cook for 5 to 7 minutes until veggies are soft and begin to caramelize. Sprinkle in the crushed red pepper. Add the red and green bell peppers and cook for another 10 minutes. Add ¼ cup of water. Stir in the sauce and cook for 20 to 30 minutes until it becomes thick. Add the white beans in and stir thoroughly. Serve and enjoy.

Ingredients

  • 1 can of red beans, soaked and softened
  • 15 cups of water
  • 6 large ham hocks
  • 2 ½ cups celery, diced
  • 2 cups of green bell pepper, diced
  • 1 yellow onion, diced
  • 2 large pinches white pepper
  • 2 large pinches of thyme leaves
  • 1 pinch oregano
  • 1 pinch cayenne pepper
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tbsp hot sauce
  • 1 pound smoked sausage, sliced
  • 5 cups of white rice, cooked

Directions

Cover your beans with cold water and let soak overnight. Drain and rinse the beans under cold water before cooking them. Place your ham hocks, 9 cups of water, onion, celery, green bell peppers, bay leaves, and seasonings. Mix thoroughly. Cover the Dutch oven and stir the mixture well. Cover and bring to a boil over a high heat. Remove the lid and reduce the heat and let simmer for 1 hour. Remove from the ham hocks from the Dutch Oven and set them to the side. Discard the water in the Dutch Oven. Add in the drained beans and 4 cups of water. Bring to a boil and reduce the heat. Simmer for 30 minutes, stirring. Next, add in two more cups of water and simmer for 30 minutes, stirring often. Add in your sausage and let simmer for an additional 25 to 35 minutes. Shred the ham hocks and add them back to the Dutch oven for an additional 10 minutes. Serve on rice and enjoy.
